Altstadt Amber Borracho Beans
INGREDIENTS
- 1lb Dried Pinto Beans
- ½lb Bacon
- ½ tsp Salt
- ½ tsp Garlic Powder
- 1 12 oz Can Altstadt Amber
- 1 Bunch Cilantro, Chopped
- 1 Bunch Green Onions, Chopped
- 1 14.5 oz Can Diced Tomatoes
- 1 Fresh Jalapeño Pepper, Seeded and Chopped
DIRECTIONS
- Soak beans in a large container of cool water for 8 hours or overnight.
- Cook bacon in a large skillet over medium-high heat until crispy (about 10 minutes), reserving the drippings for later. Chop.
- Drain and rinse beans. Transfer to a large pot and cover with several inches of water. Add salt and garlic powder and bring to a boil. Reduce heat to medium-low and add bacon, bacon drippings, Altstadt Amber, cilantro, green onions, tomatoes and jalapeño. Simmer until beans are tender (1½–2 hours).
