Altstadt Lager Baby Back Ribs
BRINE
- 3 12oz. Altstadt Lager beer (extra to enjoy while grilling!)
- 3 Tbsp kosher salt
- 3 Tbsp packed brown sugar
- 1 Tbsp celery seeds (optional)
- 1 tsp Cumin (optional)
- 1 Tbsp cayenne pepper
- 1½ tsp black pepper
- 4 lbs Baby Back Ribs
- Rinse ribs and remove the membrane on the back (use a sharp knife to loosen it, then grab it with a dry paper towel and pull it off).
- Mix beer, salt, brown sugar, celery seed, cumin, cayenne pepper, black pepper in a saucepan.
- Heat over low heat, stirring gently until all the salt dissolves; allow to cool.
- Place ribs in a large resealable bag and pour the cooled brine over the ribs. Squeeze out as much air as possible and seal the bag.
- Allow the ribs to brine for at least 6 hours (overnight is better), rotating the bag occasionally.
- When the grill is heated remove ribs from brine and pat dry; discard used brine.
- Grill or smoke using indirect medium heat.
- Cover grill and cook for 1½ – 1¾ hours or until the ribs are tender, and the meat has pulled back from the edges of the bone slightly.
